A fresh twist on Singaporean black pepper sauce, famously used for black pepper crab. Instead of crab, Chef Alex combines it with naturally sweet and juicy scallops and crispy pork belly. Topped with a fresh fennel salad for brightness. Punchy, zesty and full of umami, it’s the dish to try this summer.
A Miss Mi favourite returns, Kinilaw is the Philippines’ answer to ceviche. Beautiful Australian kingfish is cured in vinegar, balanced with a silky coconut emulsion and studded with jewels of grapefruit. A light and refreshing starter that tastes as good as it looks.
This dish is inspired by the iconic Filipino ‘chicken bbq’, known for its smoky, sticky and sweet glaze with fragrant roasted peanuts. The chicken is marinated overnight in a range of aromatics including ginger, garlic and coriander root, then flame-grilled and basted with glaze. To build on this flavour even further, Chef Alex has created a house made Indonesian sambal packed with bird’s eye chilli, tamarind and lime. Layers of flavour, don’t leave this one off the list.
Show-stopping crispy whole fried fish with sweet-sour sauce. The combination of tamarind and pineapple in the Malaysian-style dressing is perfectly balanced and deliciously moreish.
Earthy, delicately floral and reminiscent of vanilla, the flavour of ube brings Basque burnt cheesecake to a new realm. Baking this cheesecake for a shorter amount of time at a high temperature gives it a light and creamy texture with caramelised edges. Finish your meal on a high.
