Crafted by Head Chef Alex De Leon, the dish takes local ingredients and uses authentic Southeast Asian techniques to create a one-of-a-kind dish. Juicy, expertly grilled kangaroo is paired with a subtly nutty candlenut sauce, with sweetness from the coconut, and soy marinade which mellows the natural gamey flavour of the meat without overpowering it. The result? A dish that impressed even the most sceptical diner. “Biting into the chunks of meat, they were tender and fell apart in my mouth,” Sivertsen writes. “Would eat again.”
